According to The Daily Green, salmon is good for you. Who knew? One of the dinners on our family meal plan included salmon. I’m not much of a seafood fan, nor is my daughter, but we acquiesce for the other two seafood eaters. We made a sandwich with salmon. True, it doesn’t sound all that super but it actually was good. Here’s what we to do:
Season 4 salmon fillets with blackening (you can find it with all the other spices at your supermarket). As they sit, letting the seasoning soak in, mash together one pitted avocado and two tablespoons of Miracle Whip. Slice a red onion and two plum tomatoes as you would if you were making burgers. Cook the salmon 3-4 minutes per side. Spread the avocado mixture on whole wheat rolls and assemble a sandwich. Along with the onion and tomato, place arugula on the sandwich. It’s really good.
Here’s the list of ingredients:
- Salmon - 4 fillets (4 oz each)
- 2 teaspoons blackening
- 1 avocado
- 2 tablespoons mayonnaise (or, Miracle Whip)
- 4 whole wheat crusty rolls
- 1 cup arugula
- 1 red onion, sliced
- 2 plum tomatoes, sliced
It’s filling, to be sure, and surprisingly good. Even for those of us who don’t care much for fish. Alas, I was unable to do a beer pairing. I think a good kolsch would fit nicely with this dinner. A good Arizona choice would be SunBru from Four Peaks Brewing.
